Week 8 CSA

Week 8 (July 29-Aug 4): blueberries, tomatoes, corn on the cob, kale, patty pan squash, yellow squash, basil, eggplant, green peppers, zucchini, hot peppers

Monday: Indian-Spiced Grilled Baby Squash using the pattpan and yellow squash.  Nice and easy.

Tuesday: Baked the corn on the cob and made eggplant sandwiches again using tomato, eggplant, and basil.  Also made pico de gallo using the tomatoes, basil, and a hot pepper.

Wednesday: Made eggstatic egg salad since we had mayonnaise to use from the eggplant sandwiches last night.

Thursday: West African Peanut Stew using the tomatoes and subbing in the kale for the collards the recipe calls for.  Also subbed a hot pepper for the crushed chili flakes. We only had 4 cups of stock and did not add chicken.  It was a very hearty stew.

Friday: Fish tacos using the tomatoes and subbed in the hot peppers for the various hot peppers the recipe called for.   Good, but not as super special as we expected it to be due to the ratings.

Saturday: Zucchini and Green Pepper Casserole using a green pepper, basil, and the zucchini.  It was fine.  Needed more cheese or seasoning or something.

Sunday: Party- ate food not from CSA box.
